Tapa is available even to the sidewalks in the Philippines, but for me, only few came with outstanding tastes and tenderness. Maybe, because, there are some who are thinking about the cost of making the beef very tender.
Yeah, true enough, even with the use of pressure cooker, making the beef tender will cost you an hour. There are some powerful cooking tools that can make the beef tender for minutes only, but these tools are quite expensive.
Beef strips that are not tender is just a pain in the jaw. There are some pieces of meat that stuck in between your teeth that where they are hard. So, I recommend that you will take time until the beef is tender.
This recipe of mine also ads roasted garlic that will add more flavor to the dish.
Here are the ingredients:
- 1 kilo beef strips - boiled for 1 hours under high fire
- 6 spoon soy sauce
- Juice from 10 pieces calamansi
- 1 bulb garlic – finely minced
- 4 spoon sugar
- 2 spoon ketchup
- 1/4 cup water
- ground pepper
- 1 table spoon oil
- Make the sauce by combining the remaining sugar, soy sauce, calamansi juice, ground pepper, 1/4 cup water and ketchup. Mix well and set aside.
- Boil the beef until tender. You can use a pressure cooker to make your life easier.
- In a separate pan, saute the garlic until roasted.
- Add the tender beef and let it simmer.
- Add the special sauce and wait until thicken.
- Serve and enjoy.
For western countries you can replace calamansi by 2-3 lemons.
